1.5 lbs sirloin steak, cut into 1-inch cubes

1.5 lbs baby potatoes, halved

6 tablespoons unsalted butter, divided

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes with 3 tablespoons of melted butter, minced garlic, paprika, salt, and pepper. Toss until the potatoes are well coated.

      Arrange on Sheet Pan: Spread the seasoned potatoes in a single layer on a large sheet pan. Bake in the preheated oven for 15 minutes.

        Prepare the Steak: While the potatoes are baking, season the steak cubes with salt, black pepper, rosemary, and thyme.

          Add the Steak: After 15 minutes, remove the sheet pan from the oven and push the potatoes to one side. Add the seasoned steak cubes to the empty side of the sheet pan.

            Melt the Garlic Butter: In a small saucepan, melt the remaining 3 tablespoons of butter over low heat. Add the remaining minced garlic and let it simmer for about 2 minutes until fragrant but not browned.

              Combine and Finish Baking: Drizzle the garlic butter over the steak and potatoes. Use a spatula to toss everything gently to coat. Return the sheet pan to the oven and bake for an additional 10-15 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender.
