1 lb sirloin steak, cut into bite-sized pieces

2 medium sweet potatoes, peeled and diced

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

1 teaspoon paprika

Salt and pepper to taste

2 cups spinach (optional)

Fresh parsley, chopped for garnish

Prepare the Sweet Potatoes: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced sweet potatoes, season with salt, pepper, and paprika. Cook for about 10-15 minutes, stirring occasionally, until they become tender and slightly crispy on the outside. Remove from skillet and set aside.

    Cook the Steak: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the steak pieces in a single layer (you may need to do this in batches to avoid overcrowding). Season with salt and pepper. Cook for about 3-4 minutes on each side, or until they reach your desired doneness.

      Add Aromatics: Once the steak is browned and cooked, reduce the heat to low. Add the minced garlic, rosemary, and thyme to the skillet. Stir well and cook for an additional 1-2 minutes until fragrant.
