Ingredients

1 pound of baby carrots (or regular carrots cut into sticks)

4 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

Zest of 1 lemon

2 tablespoons lemon juice

Salt and pepper to taste

Optional: Fresh parsley, chopped for garnish

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, minced garlic, rosemary, thyme, lemon zest, lemon juice, salt, and pepper. This fragrant marinade is what will elevate the flavor of the carrots!

Marinate the Carrots: Add the baby carrots to the bowl with the marinade and toss until they are evenly coated. If time allows, let them marinate in the refrigerator for at least 30 minutes to enhance the flavors.

Preheat the Grill: Set your grill to medium heat, around 350°F (175°C). If you are using a grill basket, make sure it's clean and lightly greased to prevent sticking.

Grill the Carrots: Arrange the marinated carrots on the grill or in a grill basket. Grill for about 10-15 minutes, turning occasionally, until the carrots are tender and have nice grill marks. Make sure to check for doneness by piercing them with a fork.

Serve: Once grilled to perfection, remove the carrots from the grill. Transfer them to a serving platter, and if desired, sprinkle with chopped fresh parsley for a pop of color and flavor.

Enjoy: Serve these Garlic Herb Grilled Carrots warm as a delightful side dish for any barbecue, or alongside your favorite protein for a wholesome meal!
