Ingredients

4 medium-sized russet potatoes

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prep the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel. Place each potato on a large spoon or the bottom of a sturdy glass (this will prevent cutting all the way through) and slice them into thin slices, about 1/4-inch apart, being careful not to cut all the way through.

Garlic Butter Mixture: In a small bowl, combine melted butter, minced garlic, dried thyme, smoked paprika, salt, and pepper. Mix well.

Season the Potatoes: Place the sliced potatoes on a baking sheet lined with parchment paper. Use a pastry brush to carefully brush the garlic butter mixture between the slices and over the tops of the potatoes.

Parmesan Topping: Sprinkle grated Parmesan cheese generously over each potato, ensuring the cheese gets into the slits for maximum flavor.

Drizzle Olive Oil: Drizzle a bit of olive oil over the potatoes to help them crisp up nicely in the oven.

Bake the Potatoes: Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the edges are crispy and golden brown.

Garnish: Once done, remove from the oven and sprinkle with fresh parsley to add a pop of color and freshness.

Serve: Let the potatoes cool for a few minutes before serving. These can be a fantastic side dish for any meal or even a tasty snack on their own!
