Garlic Parmesan Chicken and Potatoes

For the Chicken:

4 boneless, skinless chicken breasts

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko preferred for extra crunch)

2 tbsp olive oil

4 cloves garlic, minced

1 tsp dried oregano

1/2 tsp paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

For the Potatoes:

1.5 pounds baby potatoes, halved or quartered

3 tbsp olive oil

1 tsp dried rosemary

1 tsp garlic powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: In a large bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, dried rosemary, garlic powder, salt, and pepper. Ensure the potatoes are well coated.

      Arrange Potatoes: Spread the seasoned potatoes on one side of a large baking sheet in a single layer.

        Prepare Chicken Coating: In a shallow bowl, combine the breadcrumbs, 1/2 cup grated Parmesan cheese, minced garlic, dried oregano, paprika, salt, and pepper.

          Coat Chicken: Brush the chicken breasts with 2 tablespoons of olive oil, ensuring they are evenly coated. Then, press each chicken breast into the breadcrumb mixture, making sure to cover fully.

            Arrange Chicken: Place the coated chicken breasts on the opposite side of the baking sheet from the potatoes.

              Bake: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the potatoes are tender and golden.

                Add Final Touch: In the last 5 minutes of baking, sprinkle the remaining 1/4 cup of grated Parmesan cheese over the potatoes to let it melt and become slightly crispy.

                  Garnish & Serve: Once cooked, take the baking sheet out of the oven. Allow the chicken to rest for a few minutes before garnishing with fresh parsley. Serve alongside the crispy garlic Parmesan potatoes.
