Ingredients

4 bone-in, skin-on chicken thighs

1 lb baby potatoes, halved

4 cloves garlic, minced

1 cup grated Parmesan cheese

1/4 cup olive oil

2 tsp Italian seasoning

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.

Coat the Chicken: Add the chicken thighs to the bowl and turn them to coat thoroughly with the marinade.

Prepare the Potatoes: In a separate bowl, toss the halved baby potatoes with about half of the marinade (you can reserve the rest for later). Ensure the potatoes are evenly coated.

Arrange in a Baking Dish: In a large, rimmed baking sheet or a roasting pan, arrange the chicken thighs skin-side up. Scatter the coated baby potatoes around the chicken.

Add Parmesan: Sprinkle the grated Parmesan cheese evenly over the chicken thighs and potatoes.

Bake: Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.

Broil for Extra Crisp: For an extra crispy skin on the chicken, switch to broil mode for the last 3-5 minutes of cooking, keeping a close eye to avoid burning.

Garnish and Serve: Once done, remove from the oven and let it rest for a few minutes. Sprinkle with chopped fresh parsley and serve with lemon wedges on the side for a burst of freshness.
