Garlicky Shrimp and Spinach

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

4 cups fresh spinach, washed and roughly chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon lemon juice

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water. Pat dry with paper towels and season with salt and black pepper.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 30 seconds, or until fragrant, being careful not to burn the garlic.

      Cook Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Cook for about 2-3 minutes on one side until they turn pink and start to curl. Flip the shrimp and cook for an additional 1-2 minutes until fully cooked. Remove the shrimp from the skillet and set aside.

        Sauté Spinach: In the same skillet, add the butter and then the chopped spinach. Cook for 2-3 minutes until the spinach wilts down. Stir occasionally.

          Combine: Return the cooked shrimp to the skillet. Add the lemon juice, and toss everything together until well combined. Adjust seasoning with salt and pepper as needed.

            Serve: Serve the garlicky shrimp and spinach hot, sprinkled with grated Parmesan cheese and fresh parsley, if desired.
