Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¼ cup fresh chives, chopped

1 cup buttermilk

1 tablespoon honey (optional)

Extra melted butter for brushing (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Chives: Gently fold in the shredded cheddar cheese and chopped chives until evenly distributed throughout the mixture.

Incorporate Wet Ingredients: In a separate bowl, mix together the buttermilk and honey (if using). Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.

Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about ¾ inch thick. Use a round biscuit cutter (about 2-3 inches in diameter) to cut out biscuits. Gather any scraps, gently knead, and cut out additional biscuits.

Bake: Place the biscuits on the prepared baking sheet, leaving a little space between each. Brush the tops with melted butter if desired. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Cool and Serve: Once baked, remove the biscuits from the oven and let them cool on a wire rack for a few minutes. Serve warm with butter or your favorite spreads.
