1 cup cornmeal

1 cup buttermilk

8 slices of hearty white or sourdough bread

4 slices of cheddar cheese (optional)

¼ cup mayonnaise

1 tablespoon Dijon mustard

Prepare the Tomatoes: Start by washing the green tomatoes thoroughly. Slice them into ½-inch thick rounds and set aside.

    Set Up the Breading Station: In one bowl, combine the all-purpose flour, paprika, salt, black pepper, and garlic powder. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal.

      Bread the Tomatoes: Dip each tomato slice first into the flour mixture, coating it well. Shake off any excess. Then, submerge it in the buttermilk for a moment, allowing it to soak in slightly. Finally, coat the slice in cornmeal, pressing lightly to help it adhere. Repeat with all tomato slices.

        Heat the Oil: In a large skillet, pour in about ½ inch of vegetable oil and heat it over medium-high heat until shimmering (around 350°F or 175°C).

          Fry the Tomatoes: Carefully place a few tomato slices at a time into the hot oil, avoiding overcrowding. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.
