Ingredients

1 ½ cups all-purpose flour

1 tablespoon baking powder

¼ teaspoon salt

2 tablespoons sugar

2 large eggs

1 ¼ cups milk

½ cup melted unsalted butter

1 teaspoon vanilla extract

6 large eggs (for filling)

3 tablespoons milk (for scrambled eggs)

½ cup shredded cheese (cheddar or your choice)

½ cup cooked and crumbled bacon or sausage (optional)

Fresh chives, chopped (for garnish)

Maple syrup or hot sauce (for serving)

Instructions

Prepare the Waffle Batter:

    - In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

      - In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.

        - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

          Preheat Waffle Iron:

            - Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it if necessary.

              Cook the Waffles:

                - Once the waffle iron is hot, pour in about ½ cup of the batter (or the recommended amount for your waffle iron) and close it.

                  - Cook until golden brown and crispy, about 4-5 minutes, or until the indicator light shows it’s ready.

                    - Repeat with the remaining batter, placing finished waffles on a wire rack to keep them crisp.

                      Scramble the Eggs:

                        - In a medium bowl, whisk together the eggs and 3 tablespoons of milk. Heat a non-stick skillet over medium heat.

                          - Add the eggs to the skillet and cook gently, stirring frequently until they are soft and slightly runny. Remove from heat when they are still a little undercooked, as they will continue to cook off the heat.

                            - Mix in the shredded cheese and crumbled bacon or sausage if using. Stir until the cheese is melted and fully incorporated.

                              Assemble the Waffle Tacos:

                                - Cut each waffle in half and gently bend one half to create a taco shape.

                                  - Spoon the scrambled egg mixture into the waffle taco shells.

                                    Serve:

                                      - Garnish with chopped chives and serve warm with a side of maple syrup or hot sauce for drizzling.
