12 oz assorted seafood (such as shrimp, scallops, and mussels)

1 cup heavy cream

1/2 cup dry white wine

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1 teaspoon fresh thyme, chopped

1 teaspoon fresh dill, chopped

Salt and pepper to taste

1/2 cup grated Gruyère cheese

1/4 cup breadcrumbs

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions
 

Prepare the Seafood: Rinse the assorted seafood under cold water, then pat dry with paper towels. Set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

      Add Wine and Cream: Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly. Then add the heavy cream, stirring to combine.

        Incorporate Seafood: Add the assorted seafood (shrimp, scallops, and mussels) to the skillet and season with salt, pepper, thyme, and dill. Cook for about 4-5 minutes until the seafood is cooked through and opaque.

          Add Vegetables: Gently fold in the chopped spinach and cherry tomatoes. Cook for an additional 2 minutes until the spinach has wilted.

            Assemble Cassolette: Preheat your oven to 375°F (190°C). Spoon the seafood mixture into individual cassolette or oven-safe ramekins.

              Top with Cheese and Breadcrumbs: Sprinkle the grated Gruyère cheese and breadcrumbs evenly over each portion.

                Bake: Place the cassolette dishes in the preheated oven and bake for about 15-20 minutes, or until the top is golden brown and bubbly.
