12 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

1 cup cherry tomatoes, halved

1 cup spinach, chopped

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

2 cups marinara sauce

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, oregano, basil, and red pepper flakes if using. Cook for about 5-7 minutes or until the chicken is cooked through and golden brown.

        Add Vegetables: Once the chicken is cooked, add the chopped red onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until the onion is soft and fragrant.

          Mix in Spinach and Tomatoes: Stir in the chopped spinach and halved cherry tomatoes. Cook until the spinach has wilted, about 2 minutes.

            Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta, chicken and vegetable mixture, sliced olives, marinara sauce, and half of the crumbled feta cheese. Mix thoroughly until everything is well-coated.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly and sprinkle the remaining feta cheese and grated Parmesan cheese over the top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes until the cheese is melted and bubbly, and the top is golden brown.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
