Greek Chicken Pasta Salad

8 oz (about 3 cups) rotini or penne pasta

1 lb boneless, skinless chicken breasts

1 tsp olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped

1/4 cup sun-dried tomatoes, sliced

1/4 cup Dijon mustard

1/2 cup red wine vinegar

1/3 cup olive oil

1 tsp dried oregano

1 tsp garlic powder

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Cook the Chicken: While the pasta cooks, heat 1 tsp olive oil in a grill pan or skillet over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken for about 6-7 minutes on each side, or until fully cooked through (internal temperature should reach 165°F). Remove from heat and let cool for a few minutes before slicing into bite-sized pieces.

      Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, sun-dried tomatoes, parsley, and feta cheese. Mix well.

        Make the Dressing: In a separate bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, dried oregano, garlic powder, and a pinch of salt and pepper until emulsified.

          Combine: Add the cooled pasta and sliced chicken to the bowl with the vegetable and cheese mixture. Pour the dressing over the top and gently toss everything together until well combined.

            Chill & Serve: Refrigerate the pasta salad for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature.
