Greek Yogurt Chicken Salad Wraps

2 cups cooked chicken breast, shredded

1 cup plain Greek yogurt

1/4 cup mayonnaise (optional for extra creaminess)

1/4 cup celery, finely chopped

1/4 cup red onion, finely diced

1/4 cup red bell pepper, diced

1/4 cup cucumber, diced

1/4 cup fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

Whole wheat or spinach wraps

Leafy greens (like romaine or spinach) for the wrap

Instructions
 

Prepare the Chicken: If using leftovers, shred the cooked chicken breast into bite-sized pieces. If cooking fresh chicken, boil or grill it until fully cooked, then let it cool before shredding.

    Mix the Dressing: In a large bowl, combine the Greek yogurt, mayonnaise (if using), lemon juice, salt, and pepper. Stir well until smooth and evenly mixed.

      Add Vegetables: Add the chopped celery, red onion, red bell pepper, cucumber, and dill to the yogurt mixture. Stir until all the veggies are coated in the yogurt dressing.

        Combine Chicken and Dressing: Carefully fold in the shredded chicken until it’s well coated with the Greek yogurt mixture. Taste and adjust seasoning if necessary.

          Assemble the Wraps: Lay a whole wheat or spinach wrap flat on a clean surface. Place a handful of leafy greens in the center, then spoon a generous portion of the chicken salad mixture on top of the greens.

            Wrap it Up: Fold the sides of the wrap inward and then roll from the bottom up, tucking in the sides as you go to secure the filling.

              Slice and Serve: Cut the wrap in half diagonally and serve immediately, or wrap it in parchment paper for a delicious on-the-go lunch.
