1 cup cooked chicken, shredded

4 large eggs

2-3 green chilies, finely chopped (adjust for spice preference)

1/2 cup shredded cheese (cheddar or pepper jack for extra kick)

1/4 cup green onions, sliced

1 tablespoon olive oil

1 teaspoon cumin powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil to prevent sticking.

    Prepare Chicken Mixture: In a bowl, combine the shredded chicken, chopped green chilies, shredded cheese, green onions, cumin powder, and a pinch of salt and pepper. Mix well until all ingredients are evenly incorporated.

      Fill Muffin Cups: Spoon the chicken mixture into each muffin cup, filling them about halfway.

        Whisk Eggs: In a separate bowl, crack the eggs and whisk them until fully combined. Season with a little more salt and pepper.

          Pour Egg Mixture: Carefully pour the whisked eggs into each muffin cup over the chicken mixture, filling them almost to the top.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg is set and lightly golden on top.

              Cool and Garnish: Remove the muffin tin from the oven and allow the egg cups to cool for a few minutes. Carefully run a knife around the edges of each cup to loosen them and gently pop them out.

                Serving: Transfer the egg cups to a serving plate. Garnish with fresh cilantro before serving.
