Ingredients

4 slices of sourdough bread

4 ounces of thinly sliced prosciutto

4 ounces of sliced salami

4 ounces of aged cheddar cheese, grated

2 ounces of creamy brie cheese, sliced

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon olive oil

Fresh arugula (for garnish)

Salt and pepper to taste

Instructions

Prepare the Spreads: In a small bowl, mix the Dijon mustard and honey together until smooth. Set aside.

Assemble the Sandwich: Lay out the slices of sourdough bread. On two of the slices, spread a generous amount of the honey-Dijon mixture. Layer the prosciutto, salami, aged cheddar, and brie cheese evenly on top. Season with salt and pepper to taste. Top with the remaining slices of sourdough bread to form two sandwiches.

Prepare for Grilling: Brush the outside of each sandwich with olive oil to achieve a beautifully golden and crispy crust.

Grill the Sandwiches: Preheat a skillet or griddle over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until golden brown and the cheese has melted. Use a spatula to gently press the sandwiches down for even grilling.

Serve and Garnish: Once grilled to perfection, remove the sandwiches from the skillet and cut them in half. Serve immediately, garnished with fresh arugula on the side for a peppery contrast to the rich flavors of the sandwich.
