Ingredients

2 large chicken breasts, cooked and shredded

6 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup ranch dressing

4 large flour tortillas

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions

Prepare the Chicken: If not already cooked, season the chicken breasts with garlic powder, onion powder, smoked paprika, and black pepper. Grill or pan-cook until fully cooked, then shred them and set aside.

Cook the Bacon: In a large skillet, cook the bacon until crispy. Remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.

Mix the Filling: In a large bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, Monterey Jack cheese, and ranch dressing. Mix until well combined.

Assemble the Quesadillas: Lay a tortilla on a clean surface. Spread a generous amount of the chicken-bacon-ranch mixture over one half of the tortilla. Fold the other half over, pressing gently to seal.

Grill the Quesadillas: In the same skillet, heat olive oil over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Repeat with the remaining tortillas.

Slice and Serve: Once grilled to perfection, remove the quesadillas from the skillet and let them rest for a minute. Then, slice them into wedges, garnish with fresh cilantro, and serve with salsa and sour cream on the side.
