For the Chicken Bites:

1 lb (450g) boneless skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

For the Creamy Garlic Sauce:

½ cup mayonnaise

¼ cup plain Greek yogurt

3-4 garlic cloves, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon fresh chives or parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the cubed chicken, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix until the chicken is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Sauce: In a medium bowl, whisk together the mayonnaise, Greek yogurt, minced garlic, lemon juice, Dijon mustard, salt, and black pepper until smooth and creamy. Adjust seasoning as needed. Stir in the chopped chives or parsley and refrigerate until ready to serve.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 20 minutes to prevent burning.

        Skewer the Chicken: If using skewers, thread the marinated chicken cubes onto them, leaving a little space between each piece for even cooking.

          Grill the Chicken: Place the skewers (or chicken directly) on the grill. Cook for 3-4 minutes on each side, or until the chicken is cooked through with nice grill marks and reaches an internal temperature of 165°F (75°C).
