2 large chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 avocado, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

1 tablespoon lime juice (for salsa)

Salt and pepper to taste (for salsa)

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, black pepper, and lime juice. Add the chicken breasts and ensure they’re well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours for enhanced flavor).

    Prepare the Quinoa: Cook quinoa according to package instructions. Once cooked, fluff with a fork and set aside.

      Make the Avocado Salsa: In a separate bowl, combine cherry tomatoes, cucumber, avocado, red onion, cilantro, lime juice, salt, and pepper. Gently toss to combine and set aside.
