Grilled Chicken Bruschetta Pasta

Ingredients
  

12 oz pasta (penne or fusilli works well)

1 lb boneless, skinless chicken breasts

2 tbsp olive oil (for chicken)

Salt and pepper, to taste

2 cups cherry tomatoes, halved

1/4 cup fresh basil, chopped

3 cloves garlic, minced

1 tbsp balsamic vinegar

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup grated Parmesan cheese

1 tbsp olive oil (for pasta)

1/4 tsp red pepper flakes (optional)

Instructions
 

Prepare the Pasta:

    - Bring a large pot of salted water to a boil. Cook pasta according to the package instructions until al dente. Drain and drizzle with 1 tablespoon of olive oil to prevent sticking. Set aside.

      Grill the Chicken:

        - Preheat your grill or grill pan over medium-high heat.

          - Season the chicken breasts with 2 tablespoons of olive oil, salt, and pepper.

            - Grill the chicken for 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C).

              - Once done, remove from the grill and let it rest for a few minutes before slicing into thin strips.

                Make the Bruschetta Topping:

                  - In a medium mixing bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, pepper, and red pepper flakes (if using). Toss gently and let it sit while the flavors meld.

                    Combine the Ingredients:

                      - In a large bowl, combine the cooked pasta, sliced grilled chicken, bruschetta mixture, and mozzarella balls. Toss well to combine and ensure everything is coated.

                        Serve:

                          - Divide the pasta among serving plates or bowls.

                            - Sprinkle with grated Parmesan cheese and additional fresh basil if desired. Serve immediately.
