Grilled Chicken & Mango Salsa Wraps

For the Grilled Chicken:

2 large chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper to taste

For the Mango Salsa:

1 ripe mango, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 small jalapeño, diced (optional for heat)

Juice of 1 lime

¼ cup fresh cilantro, chopped

Salt to taste

For the Wraps:

4 large flour tortillas or whole wheat wraps

1 cup fresh spinach or mixed greens

½ avocado, sliced (optional)

Crumbled feta cheese or queso fresco (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine olive oil, smoked paprika, garlic powder, ground cumin, salt, and pepper. Add the chicken breasts and rub the marinade all over. Let marinate for at least 30 minutes (or refrigerate for a few hours for more flavor).

      Prepare the Mango Salsa:

        - In a medium bowl, mix together the diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, chopped cilantro, and a pinch of salt. Stir well and let it sit for the flavors to meld while you grill the chicken.

          Grill the Chicken:

            - Preheat your grill or grill pan over medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side or until fully cooked and an internal temperature of 165°F (75°C) is reached.

              - Once cooked, remove from the grill and let rest for 5 minutes before slicing into thin strips.

                Assemble the Wraps:

                  - Lay a tortilla flat on a clean surface. Place a handful of spinach or mixed greens in the center, followed by a portion of the grilled chicken slices. Top with a generous scoop of mango salsa. Add avocado slices and crumbled feta cheese if desired.

                    - Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, creating a wrap.

                      Serve:

                        - Slice the wraps in half diagonally and serve immediately with extra mango salsa on the side if desired. Enjoy the refreshing and vibrant flavors!
