Grilled Chicken & Peach Salad

Ingredients
  

2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

6 cups mixed greens (arugula, spinach, and romaine)

1/2 cup crumbled feta cheese

1/4 cup red onion, thinly sliced

1/4 cup walnuts, toasted

1/4 cup balsamic vinaigrette

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, salt, and pepper. Coat the chicken breasts in the mixture and let them marinate for at least 30 minutes.

    Preheat Grill: Preheat your grill or grill pan over medium-high heat.

      Grill Chicken: Once preheated, grill the marinated chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

        Grill Peaches: On the same grill, place the peach slices cut-side down and grill for about 2-3 minutes until char marks appear. Remove from the grill.
