Grilled Chicken Ranch Flatbreads

2 large flatbreads or naan

2 boneless, skinless chicken breasts

1 cup ranch dressing (plus more for drizzling)

1 cup shredded mozzarella cheese

½ cup cherry tomatoes, halved

1 cup fresh spinach leaves

¼ cup red onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, mix the olive oil, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Let them marinate for at least 30 minutes to infuse flavor.

    Preheat the Grill: While the chicken is marinating, preheat your grill to medium-high heat (about 375-400°F).

      Grill the Chicken: Once hot, place the marinated chicken breasts on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.

        Prepare the Flatbreads: While the chicken is resting, place the flatbreads on the grill for about 1-2 minutes on each side to warm and slightly char them. Remove from the grill.

          Assemble the Flatbreads: Spread a generous amount of ranch dressing over each flatbread. Top with sliced grilled chicken, mozzarella cheese, cherry tomatoes, spinach, and red onion.

            Melt the Cheese: Return the assembled flatbreads to the grill. Close the lid and grill for an additional 2-3 minutes, or until the cheese is melted and bubbly.

              Finish and Serve: Remove the flatbreads from the grill. Drizzle with extra ranch dressing and garnish with fresh cilantro or parsley if desired. Slice into wedges and serve hot.
