2 boneless, skinless chicken breasts

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 red onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

½ teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Aluminum foil

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using charcoal, prepare the coals for direct cooking.

    Prepare the Chicken: Season the chicken breasts with olive oil, Italian seasoning, paprika, salt, and pepper. Make sure to coat them evenly on both sides.

      Prepare the Veggies: In a large bowl, combine the sliced bell peppers, zucchini, cherry tomatoes, red onion, and minced garlic. Drizzle with olive oil and season with salt, pepper, and a pinch of Italian seasoning. Toss to combine.

        Assemble the Foil Packs: Cut four large sheets of aluminum foil (about 12x12 inches each). Place one chicken breast in the center of each sheet. Divide the veggie mixture evenly over the chicken.

          Seal the Foil Packs: Fold the sides of the foil over the chicken and veggies, creating a sealed packet by crimping the edges tightly.

            Grill the Packs: Place the foil packs on the grill and cook for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the veggies are tender.

              Check for Doneness: Carefully remove the foil packs from the grill (they will be hot!) and let them sit for a couple of minutes to allow the steam to redistribute.
