Grilled Eggplant Caprese

2 medium-sized eggplants

2 large ripe tomatoes

8 oz fresh mozzarella cheese

1/4 cup fresh basil leaves

3 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

1 clove garlic, minced

Prepare the Eggplants: Slice the eggplants into 1/2-inch thick rounds. Sprinkle both sides with salt and set them aside for 30 minutes to draw out moisture. This helps to reduce bitterness.

    Preheat the Grill: While the eggplants are sweating, preheat your grill to medium-high.

      Rinse and Pat Dry: After 30 minutes, rinse the eggplant slices under cold water to remove the salt, then pat them dry with paper towels.

        Season the Eggplants: In a small bowl, mix together the olive oil, minced garlic, salt, and pepper. Brush this mixture generously onto both sides of the eggplant slices.

          Grill the Eggplants: Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and let cool slightly.

            Slice the Tomatoes and Mozzarella: While the eggplants are grilling, slice the tomatoes and fresh mozzarella into similar thicknesses, about 1/4 inch.

              Assemble the Caprese: On a serving platter, layer the grilled eggplant, tomato slices, and mozzarella alternatingly. Tuck fresh basil leaves between layers for added flavor and freshness.

                Finishing Touches: Drizzle the balsamic glaze over the top of the assembled dish and sprinkle with a little extra salt and pepper to taste.
