8 slices of rustic artisan bread (such as sourdough or country)

1 cup fig jam

8 ounces creamy goat cheese, softened

4 ounces brie cheese, sliced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons unsalted butter, softened

1 tablespoon olive oil

Pinch of sea salt

Fresh arugula or baby spinach, for serving (optional)

Prepare the Bread: Start by laying out the slices of rustic artisan bread on a clean surface. Spread a generous layer of fig jam on one side of each slice. Set aside.

    Create the Cheese Mixture: In a mixing bowl, combine the softened goat cheese with the chopped rosemary and a pinch of sea salt. Mix until well blended.

      Assemble the Sandwich: On the un-jammed side of four slices of bread, spread about 2-3 tablespoons of the goat cheese mixture. Layer sliced brie cheese on top of the goat cheese. Top with the remaining slices of bread, fig jam side facing the cheese.
