Grilled Fish Tostadas

1 lb firm white fish (such as tilapia or mahi-mahi)

4 tablespoons olive oil, divided

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon lime zest

Salt and pepper, to taste

6 small tostada shells (store-bought or homemade)

1 cup shredded red cabbage

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

1/4 cup sour cream or Greek yogurt (optional)

Fresh salsa (optional for serving)

Instructions
 

Marinate the Fish: In a medium bowl, mix together 2 tablespoons of olive oil, smoked paprika, garlic powder, cumin, lime zest, salt, and pepper. Add the fish and ensure it is fully coated in the marinade. Let it marinate for at least 20 minutes.

    Preheat the Grill: Heat your grill or grill pan over medium-high heat.

      Grill the Fish: Once the grill is hot, place the marinated fish on the grill. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from the grill and let it rest for a few minutes before breaking it into bite-sized pieces.

        Prepare the Tostadas: While the fish is resting, you can lightly grill the tostada shells for about 1-2 minutes on each side until they are warm and slightly crispy.
