Grilled Garlic Shrimp Skewers

1 pound large shrimp, peeled and deveined

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust to taste)

Juice of 1 lemon

Zest of 1 lemon

Salt and black pepper to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a medium bowl, whisk together the olive oil, minced garlic, smoked paprika, red pepper flakes, lemon juice, lemon zest, salt, and black pepper. Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes for the flavors to meld, or up to 2 hours for a more intense flavor.

    Prepare the Skewers: If using wooden skewers, ensure they are soaked in water to prevent burning. If using metal skewers, they can be used directly.

      Skewer the Shrimp: After marination, thread the shrimp onto the skewers, approximately 4-5 shrimp per skewer, making sure to leave a little space between each shrimp for even cooking.

        Preheat the Grill: Heat your grill to medium-high (about 400°F/200°C). If using a grill pan on the stovetop, preheat it over medium-high heat with a little oil to prevent sticking.

          Grill the Shrimp: Place the skewers on the grill. Grill the shrimp for about 2-3 minutes per side or until they are opaque and have nice grill marks. Be careful not to overcook, as shrimp can become rubbery.

            Serve: Once cooked, remove the skewers from the grill and transfer them to a serving platter. Garnish with fresh parsley for a pop of color and additional flavor. Optionally, serve with extra lemon wedges on the side.
