Grilled Peach & Arugula Salad

2 ripe peaches, halved and pitted

4 cups fresh arugula

1/4 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

1/4 red onion, thinly sliced

3 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper, to taste

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it on the stove over medium-high heat.

    Prepare the Peaches: Lightly brush the cut sides of the peach halves with olive oil to prevent sticking and enhance flavor.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and the peaches are softened. Remove from the grill and let them cool slightly before slicing them into wedges.

        Toast the Walnuts: In a dry skillet over medium heat, toast the walnuts for approximately 3-5 minutes, stirring occasionally until they are fragrant and golden. Be careful not to burn them.

          Assemble the Salad: In a large salad bowl, add the arugula, grilled peach wedges, sliced red onion, crumbled feta cheese, and toasted walnuts.

            Dress the Salad: Drizzle the salad with balsamic glaze and the remaining olive oil. Season with salt and pepper to taste. Toss gently to combine all ingredients without bruising the arugula.

              Serve Immediately: Plate the salad for individual servings, garnish with extra feta cheese and walnuts, and drizzle a touch more balsamic glaze if desired.
