Grilled Peach BBQ Chicken

4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1 cup barbecue sauce (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon honey (optional, for extra sweetness)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh basil or cilantro for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

Prepare the Marinade: In a small bowl, mix together the olive oil, honey, smoked paprika, garlic powder, onion powder, salt, and pepper. Reserve 1/4 cup of this marinade for the peach glaze.

    Marinate the Chicken: Place the chicken breasts in a large zip-top bag or shallow dish. Pour the remaining marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to 2 hours.

      Prepare the Peaches: While the chicken is marinating, prepare the peaches. Lightly brush the cut sides with olive oil, and sprinkle with a pinch of salt.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

          Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F or 75°C).

            Grill the Peaches: During the last 5 minutes of cooking, place the peach halves, cut side down, on the grill. Grill for about 3-4 minutes until they have nice grill marks and are softening.

              Glaze the Chicken: Brush the reserved marinade over the chicken during the last minute of grilling for extra flavor.

                Serve: Once the chicken and peaches are done, remove them from the grill. Let the chicken rest for a few minutes before slicing. Serve the grilled chicken topped with the warm grilled peaches. Optionally, garnish with fresh basil or cilantro and serve with lemon wedges on the side for an added zesty kick.
