Grilled Peach Sandwich Melt

2 ripe peaches, halved and pitted

4 slices of sourdough bread

4 oz sharp cheddar cheese, shredded

4 oz goat cheese, softened

2 tbsp honey

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

2 tbsp unsalted butter, softened

Salt and pepper to taste

Optional: arugula or spinach for added greens

Prepare the Peaches: Preheat your grill or grill pan over medium heat. Brush the cut sides of the peach halves lightly with olive oil. Place them cut side down on the grill and cook for about 4-5 minutes or until charred and softened. Once done, remove from grill and let cool slightly. Slice the peaches into thin wedges.

    Mix the Cheese Spread: In a small bowl, combine the softened goat cheese, honey, and thyme. Season with salt and pepper to taste. Mix well until creamy and well combined.

      Assemble the Sandwich: Take two slices of sourdough bread and spread half of the goat cheese mixture on each slice. Layer the grilled peach slices evenly over the cheese, then sprinkle the shredded cheddar on top. For a fresh touch, you can add a handful of arugula or spinach before topping with the remaining slices of sourdough.
