4 slices of whole grain bread

4 slices of cheddar cheese

4 slices of turkey or ham

2 tablespoons of mayonnaise

2 teaspoons of Dijon mustard

1 tablespoon of butter (for grilling)

Fresh spinach leaves (optional)

Sliced tomatoes (optional)

Salt and pepper, to taste

Instructions
 

Begin by spreading mayonnaise on one side of each slice of bread and Dijon mustard on the other side.

    Layer the sandwich: On the mayonnaise side of two bread slices, place a slice of cheddar cheese, followed by the turkey or ham, a few fresh spinach leaves, and slice of tomato if using. Season with salt and pepper. Top with another slice of cheddar and close the sandwich with the remaining bread slices, mayonnaise side out.

      Heat a skillet or griddle over medium heat and add one tablespoon of butter. Once melted, place the sandwich in the skillet.

        Grill the sandwich for about 3-4 minutes on one side, until golden brown and the cheese begins to melt. Carefully flip the sandwich using a spatula and add more butter if necessary. Grill the other side for another 3-4 minutes.

          Once both sides are crisp and golden, and the cheese is fully melted, remove the sandwich from the skillet.

            Allow the sandwich to rest for a minute before cutting it in half. Serve warm with your favorite school lunch sides like carrot sticks or apple slices.
