1 pound large shrimp, peeled and deveined

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 tablespoon olive oil

2 tablespoons honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 lime, juice and zest

Fresh cilantro or parsley, for garnish

Metal or wooden skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine olive oil, honey, smoked paprika, garlic powder, lime juice, lime zest, salt, and pepper. Add the shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for at least 30 minutes, up to 2 hours in the refrigerator for more flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Alternate threading the marinated shrimp, peach wedges, and bell pepper pieces onto the skewers. Leave a little space between each piece for even cooking.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). Lightly oil the grill grates to prevent sticking.

        Grill the Skewers: Place the skewers on the preheated grill. Grill for about 2-3 minutes per side, or until the shrimp turn pink and opaque, and the peaches and bell peppers have nice grill marks. Rotate carefully to ensure even cooking.
