2 medium zucchinis, sliced lengthwise into 1/4-inch strips

2 tablespoons olive oil

Salt and pepper, to taste

1 cup hummus (store-bought or homemade)

4 large whole grain tortillas or wraps

1 cup shredded carrots

1 cup baby spinach

1/2 cup roasted red peppers, sliced

1/2 teaspoon smoked paprika (optional)

Fresh herbs for garnish (like parsley or cilantro), chopped

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan on the stovetop.

    Prepare the Zucchini: In a mixing bowl, toss the sliced zucchini with olive oil, salt, and pepper until evenly coated.

      Grill the Zucchini: Place the zucchini strips on the grill and cook for about 3-4 minutes on each side, or until they have nice grill marks and are tender but still crisp. Remove from the grill and set aside to cool slightly.
