Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup black beans, rinsed and drained

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

2 cups spinach (or kale)

Juice of 1 lime

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 8-10 minutes, stirring occasionally, until tender and slightly crispy on the outside. Remove them from the skillet and set aside.

    Cook the Ground Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onions and sauté for about 2-3 minutes, or until they become translucent. Add the minced garlic and bell pepper; cook for an additional 2 minutes.

      Add the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

        Spice It Up: Once the turkey is cooked, stir in the cumin, smoked paprika, chili powder, and season with salt and pepper to taste. Mix well to incorporate the spices.

          Combine Ingredients: Add the cooked sweet potatoes and the black beans to the skillet. Stir gently to combine all ingredients and cook for an additional 3-4 minutes until everything is heated through.

            Finish with Greens: Fold in the spinach (or kale) and let it wilt for about 1-2 minutes. Squeeze the lime juice over the skillet for a fresh zing and give it a final stir.

              Serve: Once everything is well combined and heated through, remove the skillet from heat. Garnish with fresh cilantro if desired. Serve warm as a delicious one-pan meal!
