Ingredients

1 medium head of cauliflower (about 4 cups riced)

1 large egg

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil, for greasing

Instructions

Prep the Cauliflower: Start by preheating your oven to 425°F (220°C). Wash the cauliflower and remove the leaves and stem. Cut it into florets and then use a food processor to rice the cauliflower until it's a fine consistency. If you don't have a food processor, you can also grate it using a box grater.

Steam the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl, cover it with a microwave-safe lid or wrap, and microwave for about 5-7 minutes until softened. Allow it to cool briefly.

Squeeze Out the Moisture: Once cooled, place the cauliflower in a clean dish towel or cheesecloth and twist to squeeze out as much liquid as possible. This step is crucial for a crispy crust.

Combine the Ingredients: In a large bowl, combine the riced cauliflower, egg, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper. Mix well until everything is fully incorporated.

Shape the Crust: Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil. With your hands, shape the cauliflower mixture into a round pizza crust on the parchment paper, about 1/4 inch thick. Make sure to create an even edge around the crust.

Pre-Bake the Crust: Place the crust in the preheated oven and bake for about 20-25 minutes, or until the edges are golden brown and the surface is firm.

Add Toppings: Once the crust is baked, remove it from the oven and let it cool slightly. Add your favorite pizza sauce and toppings (like additional cheese, veggies, or lean proteins).

Finish Baking: Return the topped pizza to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

Slice and Serve: Remove from the oven, slice, and enjoy your guilt-free cauliflower pizza!
