Ingredients

1 medium head of cauliflower (about 4 cups riced)

1/2 cup shredded mozzarella cheese (plus extra for topping)

1/4 cup grated Parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or greased aluminum foil for easier clean-up.

Prepare the Cauliflower: Remove the leaves and stem from the cauliflower; chop it into florets. In a food processor, pulse the florets until they resemble fine rice or grains. If you don't have a food processor, you can grate the cauliflower using a box grater.

Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for about 8 minutes or until tender. Let it cool for a few minutes, then transfer the cauliflower to a clean kitchen towel. Twist the towel and squeeze out as much moisture as possible (this step is crucial for a crispy crust).

Combine Ingredients: In a large mixing bowl, combine the riced cauliflower, 1/2 cup mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, oregano, salt, and black pepper. Mix well until all ingredients are evenly combined.

Form the Crust: Transfer the cauliflower mixture onto the prepared baking sheet. With your hands or a spatula, spread and shape the mixture into a round or rectangular shape about 1/4 inch thick.

Bake the Crust: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the crust is firm. Check for doneness by gently lifting the edges with a spatula.

Add Toppings: Once the crust is done, remove it from the oven. Add your favorite pizza sauces, toppings, and an extra sprinkle of mozzarella cheese if desired.

Final Bake: Return the topped pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serve: Remove from the oven, let it cool slightly, then slice and serve! Enjoy your guilt-free cauliflower pizza crust with fresh basil or a drizzle of olive oil if desired.
