1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup Greek yogurt (vanilla or plain)

1 scoop vanilla protein powder

1/4 cup cream cheese, softened

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1 tsp pumpkin pie spice

1/2 tsp cinnamon

Pinch of salt

Optional: crushed graham crackers for topping

In a mixing bowl, combine the pumpkin puree, Greek yogurt, and cream cheese. Use a hand mixer or whisk to blend until smooth and creamy.

    Add in the vanilla protein powder, honey or maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and a pinch of salt. Mix until all the ingredients are well incorporated and you have a smooth mixture.

      Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.

        Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (typically 20-25 minutes) until it reaches a soft-serve consistency.

          If you don’t have an ice cream maker, pour the mixture into a freezer-safe container, cover it tightly, and freeze for about 4-6 hours. Stir every hour to help incorporate air and prevent ice crystals from forming.

            Once your ice cream has achieved the desired consistency, scoop it into bowls. If desired, sprinkle crushed graham crackers on top for added crunch and flavor.

              Serve immediately for a soft-serve texture or freeze longer for a firmer ice cream.
