1 large zucchini (about 1 cup shredded)

1/2 cup unsweetened applesauce

1/4 cup pure maple syrup or agave nectar

2 large eggs (or flax eggs for vegan)

1 teaspoon vanilla extract

1/2 cup whole wheat flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free if needed)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Zucchini: Wash the zucchini thoroughly, then grate it using a box grater or food processor. Make sure to squeeze out excess moisture using a clean towel or cheese cloth.

      Mix Wet Ingredients: In a large mixing bowl, combine the shredded zucchini, unsweetened applesauce, maple syrup, eggs, and vanilla extract. Whisk until all ingredients are well blended.

        Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and salt until fully combined.

          Mix Dry Into Wet: Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Avoid overmixing as it can make the brownies chewy.

            Add Chocolate Chips: Fold in the dark chocolate chips and if using, the chopped nuts. The mixture will be thick and fudgy.
