Ingredients

6 large eggs

1 cup diced ham (preferably smoked or honey-baked)

1 cup shredded cheddar cheese

1/2 cup chopped bell peppers (red or green)

1/4 cup finely chopped green onions

1/2 cup milk

1 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

1/4 tsp salt

1/2 tsp dried parsley (optional)

Cooking spray or muffin liners

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners to prevent sticking.

Prepare the Egg Mixture: In a large bowl, crack the eggs and whisk them together with the milk, garlic powder, onion powder, black pepper, salt, and dried parsley. Make sure everything is well mixed.

Add Fillings: Add the diced ham, shredded cheddar cheese, chopped bell peppers, and green onions to the egg mixture. Gently fold the ingredients into the eggs until evenly distributed.

Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for the muffins to rise without overflowing.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are puffed up and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the muffins from the oven and let them cool in the tin for a few minutes. Carefully remove them from the tin and let them cool slightly on a wire rack. These muffins can be served warm or at room temperature.

Enjoy: Serve your savory ham and cheese egg muffins for breakfast, brunch, or as a satisfying snack throughout the day. You can also store them in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for a quick meal!
