4 cups diced potatoes (about 4 medium-sized)

2 cups cooked ham, diced

1 medium onion, finely chopped

3 cups shredded sharp cheddar cheese

1 cup sour cream

1/2 cup milk

1 can (10.5 oz) cream of mushroom soup

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon olive oil

1 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until they are just tender but not fully cooked. Drain and set aside.

      Sauté the Onion: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened and fragrant.

        Mix the Sauce: In a large mixing bowl, combine the sour cream, milk, cream of mushroom soup, garlic powder, onion powder, black pepper, and paprika. Stir until smooth.

          Combine Ingredients: In the same bowl, add the cooked diced ham, sautéed onion, and partially cooked potatoes. Fold in 2 cups of shredded cheddar cheese, reserving 1 cup for topping. Mix everything until well combined.

            Assemble the Casserole: Transfer the mixture into a greased 9x13-inch casserole dish, spreading it evenly. If you like a crunchy topping, sprinkle breadcrumbs evenly over the top, followed by the reserved shredded cheese.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
