2 cups frozen sweet corn, thawed

1 cup Hatch green chilies, diced (fresh or canned)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup all-purpose flour

1/2 cup cornmeal

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (canola or vegetable oil)

Prepare the Mixture: In a large mixing bowl, combine the thawed corn, diced Hatch chilies, cream cheese, shredded cheddar cheese, and the egg. Mix until well combined.

    Season and Thicken: Add the garlic powder, onion powder, cumin, smoked paprika, salt, and pepper to the mixture. Stir in the all-purpose flour and cornmeal until everything is evenly mixed. The mixture should hold together well but not be too dry.

      Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This will make it easier to form the poppers.

        Form the Poppers: Once chilled, scoop about a tablespoon of the mixture and roll it into a ball or shape it like a nugget. Repeat until all the mixture is formed into poppers. This recipe should make about 20 poppers.

          Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

            Fry the Poppers: Carefully drop several poppers into the hot oil, making sure not to overcrowd the pan. Fry them in batches for about 3-4 minutes or until golden brown and crispy, turning them as needed. Remove the poppers and drain them on paper towels.
