Hatch Chili Stuffed Crescent Rolls

1 package of refrigerated crescent roll dough (8 ounces)

1 cup cooked and shredded chicken (or canned chicken, drained)

1 cup shredded cheese (cheddar or pepper jack for a kick)

½ cup diced Hatch green chilies (fresh or canned, well-drained)

1 teaspoon garlic powder

1 teaspoon cumin

¼ teaspoon smoked paprika

¼ teaspoon salt

¼ teaspoon black pepper

1 egg (for egg wash)

Optional: fresh cilantro, for garnish

Optional: sour cream or guacamole, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a medium bowl, combine the cooked shredded chicken, shredded cheese, diced Hatch green chilies, garlic powder, cumin, smoked paprika, salt, and black pepper. Mix until all ingredients are well combined.

      Roll Out the Dough: Open the package of crescent roll dough and unroll it on a clean surface. Separate the dough into individual triangles as indicated on the package.

        Fill the Crescents: Place about a tablespoon of the filling at the wide end of each triangle. Carefully roll up the crescent, starting from the wide end and pinching the ends to seal the filling inside.

          Prepare for Baking: Place the stuffed crescent rolls on the prepared baking sheet. In a small bowl, beat the egg and brush it over the tops of the rolls to give them a golden finish.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the rolls are puffed and golden brown.

              Garnish and Serve: Once baked, let the rolls cool for a few minutes. Optionally, garnish with fresh cilantro before serving. Enjoy them warm with a side of sour cream or guacamole!
