Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup vegetable oil

4 large eggs

2 cups grated carrots (about 4 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped walnuts (optional)

1 teaspoon vanilla extract

For Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

Shredded coconut and chopped walnuts for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, grated carrots, crushed pineapple, and vanilla extract until well combined.

Combine Mixtures: Slowly add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix. Fold in the chopped walnuts if using.

Pour and Bake: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Remove from the oven and let them cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.

Prepare the Frosting: In a medium bowl, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar, mixing well. Pour in the milk and vanilla extract, and beat until smooth and fluffy.

Assemble the Cake: Once the cakes are completely cooled, spread a layer of frosting on the top of one cake layer, then place the second layer on top. Cover the entire cake with the remaining frosting.

Garnish (Optional): For an extra tropical touch, sprinkle the top with shredded coconut and chopped walnuts if desired.

Serve and Enjoy: Slice the cake and serve it with a smile. Enjoy your Hawaiian Carrot Pineapple Cake!
