Healthy Ground Turkey Sweet Potato Bake

1 lb ground turkey (lean)

2 medium sweet potatoes, peeled and diced

1 cup broccoli florets (fresh or frozen)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon ground cumin

Salt and pepper, to taste

½ cup shredded low-fat cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and boil for about 10 minutes, or until just tender. Drain and set aside.

      Cook Turkey and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

        Add Ground Turkey: Stir in the ground turkey and cook until it’s browned and fully cooked through, about 5-7 minutes. Break it up with a spatula as it cooks.

          Season the Mixture: Once the turkey is cooked, add the smoked paprika, dried thyme, ground cumin, salt, and pepper. Mix well, letting the spices infuse the meat.

            Combine Ingredients: In a large bowl, combine the cooked turkey mixture with the boiled sweet potatoes and broccoli florets. Mix everything together until well combined.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Evenly spread the mixture out.

                Add Cheese (if using): If you want a cheesy top, sprinkle the shredded low-fat cheese over the mixture.

                  Bake: Place the dish in the preheated oven and bake for 20-25 minutes or until heated through and the cheese is bubbly and golden brown.

                    Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley, and let it sit for 5 minutes before serving. Enjoy your healthy and comforting meal!
