Ingredients

2 cups rolled oats

1/2 cup almond flour

1/2 cup honey (or maple syrup for vegan option)

1/4 cup unsweetened almond milk (or any milk of your choice)

1/4 cup natural peanut butter or almond butter

1/2 cup mixed nuts (walnuts, almonds, pecans), chopped

1/2 cup dried berries (cranberries, blueberries, or raspberries)

1/2 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips for a touch of sweetness

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, chopped nuts, dried berries, cinnamon, and salt. Stir until evenly mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), almond milk, peanut butter (or almond butter), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is well combined. The mixture should be sticky and hold together.

Add Optional Ingredients: If you’re using dark chocolate chips, fold them into the mixture now for an extra treat.

Transfer to Baking Pan: Pour the mixture into the prepared baking pan, spreading it out evenly. Press it down firmly using the back of a spatula or your hands to ensure it's packed tightly.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Allow the bars to cool in the pan for about 10 minutes before lifting them out with the parchment paper. Let them cool completely on a wire rack. Once fully cooled, cut into squares or bars.

Store and Enjoy: Store the oatmeal bars in an airtight container for up to a week at room temperature, or freeze for longer storage. Enjoy as a quick breakfast, snack, or post-workout treat!
