Healthy Zucchini Cake Recipe Lunchbox

2 medium zucchinis (about 2 cups grated)

1 cup whole wheat flour

1/2 cup oats (rolled or quick oats)

1/2 cup almond flour

1/2 cup unsweetened applesauce

1/2 cup honey or maple syrup

1/4 cup vegetable oil (or melted coconut oil)

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Wash and dry the zucchinis. Grate them using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture to avoid a soggy cake.

      Mix the Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, oats, almond flour, baking powder, baking soda, ground cinnamon, and salt. Whisk together until well combined.

        Mix the Wet Ingredients: In another bowl, whisk together the applesauce, honey (or maple syrup), vegetable oil, eggs, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the grated zucchini, nuts, and raisins or chocolate chips (if using). Be careful not to over-mix.

            Pour into Pan: Transfer the batter into the prepared cake pan and spread it evenly.

              Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Once cool, slice the cake into squares for lunchboxes.
