2 cups all-purpose flour

1 cup unsalted butter, softened

3/4 cup powdered sugar

1 large egg yolk

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup fruit jam (strawberry, raspberry, or apricot works best)

Optional: powdered sugar for dusting

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the dough: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. This usually takes about 3-4 minutes with an electric mixer on medium speed.

      Add the yolk and vanilla: Add the egg yolk and vanilla extract to the butter-sugar mixture and continue mixing until fully combined.

        Combine dry ingredients: In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry mixture to the wet mixture, mixing until a soft dough forms. Make sure not to overwork the dough; it should be soft but not sticky.

          Chill the dough: Wrap the dough in plastic wrap and refrigerate it for about 30 minutes. This helps to firm it up and makes it easier to roll out.

            Roll and cut: Once chilled, on a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use a heart-shaped cookie cutter to cut out cookies. For half of the cookies, use a smaller heart-shaped cutter to cut out the center, creating a window.

              Bake the cookies: Place the cut-out cookies on the prepared baking sheet and bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Watch closely to avoid over-baking.

                Cool down: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

                  Assemble: Once cooled, spread about a teaspoon of jam onto the whole heart cookies, and then gently place the heart-shaped cookies with the cut-out center on top, creating a jam-filled sandwich.

                    Finishing touch: If desired, dust the top of the cookies with powdered sugar for a sweet finish.
