Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

3 large eggs

1 cup milk (whole or skim)

1/4 cup unsalted butter, melted

1 cup diced cooked ham

1 cup shredded sharp Cheddar cheese

1/4 cup chopped green onions (optional)

1/4 teaspoon paprika (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder until well combined.

Whisk Wet Ingredients: In a separate bowl, beat the eggs then mix in the milk and melted butter until smooth.

Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; it's okay if there are a few lumps.

Fold in Add-ins: Gently fold in the diced ham, shredded cheese, and green onions (if using) until evenly distributed throughout the batter.

Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. Sprinkle a pinch of paprika on top of each muffin for an extra touch.

Bake: Place the muffin tray in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
