Ingredients

4 ripe bananas, sliced

1 cup rolled oats

3/4 cup all-purpose flour

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

A pinch of salt

Vanilla ice cream (for serving, optional)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with non-stick spray or a small amount of butter.

Prepare the banana layer: In a large bowl, combine the sliced bananas with granulated sugar and a pinch of cinnamon. Mix gently to coat the bananas, then spread them evenly in the prepared baking dish.

Make the crumble topping: In another bowl, combine rolled oats, all-purpose flour, brown sugar, chopped nuts (if using), remaining cinnamon, nutmeg, and a pinch of salt. Stir well.

Add the wet ingredients: Pour the melted butter and vanilla extract into the dry ingredients and mix until crumbly and well combined. The mixture should hold together in clumps.

Assemble the crumble: Sprinkle the crumble topping evenly over the banana layer in the baking dish. Make sure to cover the bananas completely.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and crisp.

Cool and serve: Once baked, remove the crumble from the oven and let it cool slightly for about 5-10 minutes. Serve warm, optionally with a scoop of vanilla ice cream on top.
